Violation: 381.65(e), 417.2(c)(4), 417.3(a)(1)

Citation: At approximately 1232 hours, while performing a Poultry Zero Tolerance fecal check, I observed fecal material on the inside of the left drumstick on one test carcass. The fecal material was dark brown, semi-solid, and consisted of three drops: one was approximately 1/8" in diameter, the second was approximately 1/16" in diameter, and the third was a speck, all three in close proximity. I took regulatory control action by stopping the line. I informed Mr. Quality Assurance Manager, of my finding. Mr. informed me that one of his QA technicians had found fecal material approximately a half hour earlier, and they made an adjustment to the sprayers in the Inside-Outside Bird Washer. He said he was performing retests to determine if their corrective action was effective. Mr. took the carcass I had identified with fecal contamination to the IOBW and ran it through again. The fecal material was still present on the drumstick. Maintenance personnel made further adjustments, until the affected carcass was clean. This establishment has identified fecal material as a potential hazard and controls that hazard with CCP #1B. This deviation is a failure of the establishment's HACCP Plan for CCP #1B.


381.65(e) Poultry carcasses contaminated with visible fecal material shall be prevented from entering the chilling tank.

417.2(c)(4) List the procedures, and the frequency with which those procedures will be performed, that will be used to monitor each of the critical control points to ensure compliance with the critical limits;

417.3(a)(1) The cause of the deviation is identified and eliminated;
