Citation: At approximately 1900 hours when performing my scheduled 01C02 operational sanitation check I found in the breast de-boning area that the flow of the product was extremely out of control. Product was stacked very high on both belts, on all product surfaces, in boxes at the end of table was 8 to 10 bags of breasts, breast were overflowing and at times falling onto floor. I stood and watched for at least 10 minutes and no one took any corrective actions to prevent direct contamination or adulteration of product. The same person was going from cutting breast, to bagging, to carrying boxes. I spoke to both plant leads about this noncompliant. The girls stated that "the skinner machine is not working properly and that is why they keep getting behind. I took immediate corrective actions and ask the two guys to stop placing chickens on the cones to allow proper procedure and flow to resume to normal. Continued failure to meet the regulatory requirements can lead to enforcement actions as described in 9 CFR part 500.4


416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.15(a) Each official establishment shall take appropriate corrective action(s) when either the establishment or FSIS determines that the establishment’s Sanitation SOP’s or the procedures specified therein, or the implementation or maintenance of the Sanitation SOP’s, may have failed to prevent direct contamination or adulteration of product(s).
