Citation: At approximately 0650 hours, while performing my routine inspection in the Evisceration Department, I observed condensation dripping from an overhead white pipe onto the poultry carcasses on the evisceration shackle line at the House Inspection Station. I immediately took a regulatory control action by stopping production in the evisceration department. I rejected the evisceration shackle line with US Rejected Tag B39 133614 for unsanitary condition. I informed (First Processing Manager) and (Quality Assurance) of my observation. There was approximately twenty-five (25) poultry carcasses removed from the evisceration shackle line for recondition. The condensation was dripping approximately seven (7) second per minute from the overhead dirty white pipe onto the poultry carcasses on the evisceration shackle line. After sanitary conditions have been restored and preventive measures were proposed, I relinquished the regulatory control action on the evisceration shackle line at approximately 0655 hours. There was five (5) minutes downtime involves with this noncompliance. There was product involved with this noncompliance. Establishment management has received oral and written communication concerning this noncompliance. After reviewing the plant's Operational Sanitation record and GMP Monitor's record (Evisceration Department) shows no entries documented prior to my observation of this noncompliance. This document serves as a written notification that your failure to comply with regulatory requirement could result in additional enforcement action described in 9 CFR part 500


416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.2(d) Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
