Citation: On Monday, 12-05-2011, at approximately 0837 hours, while performing a review and observation component for the 01C02 procedure in the Cut-Up/Thigh Deboning Department's; I observed black grease specks and marking of various sizes on the product contact surface of the thigh transfer conveyor. I immediately took a regulatory control action by stopping production in the Thigh Deboning Department. I rejected the Thigh Transfer Conveyor with US Rejected Tag B40 170465 for unsanitary condition. All products on the thigh transfer conveyor were immediately removed from the contaminated conveyor. The black grease specks and marking smeared to the touch. I informed (Quality Assurance Manager) of my observation. After reviewing the plant's SSOP Operational Sanitation record (Thigh Deboning), I found no entries documented prior to my observation of the noncompliance. There was product involved with this noncompliance. There was about 7 minute's downtime for this noncompliance. After sanitary conditions have been restored and preventive measures were proposed, I relinquished the regulatory control actions on the Thigh Deboning Transfer Conveyor. Establishment management has received oral and written communication concerning this noncompliance. This document serves as a written notification that your failure to comply with regulatory requirement could result in additional enforcement action described in 9 CFR part 500.


416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
