Citation: At approximately 1500 hours, while performing an unscheduled review and observation component for the 01C02 procedure in the Evisceration Department, I observed condensation dripping from an overhead white pipe onto the poultry carcasses on the evisceration shackle line at the House Inspection Station. I immediately took a regulatory control action by stopping production in the evisceration department. I rejected the evisceration shackle line with US Rejected Tag B39 133543 for unsanitary condition. I informed (First Processing Manager) and (Evisceration Lead) of my observation. There were approximately twenty-five (25) poultry carcasses removed from the evisceration shackle line for recondition. I obseved the condensation dripping aproximately every five (5) second from the overhead dirty white pipe onto the poultry carcasses on the evisceration shackle line. After sanitaryy conditions have been restored and preventive measures were proposed, I relinquished the regulatory control action on the evisceration shackle line at approximately 1507 hours. There was seven (7) minutes downtime involves with this noncompliance. There was product involved with this noncompliance. Establishment management has received oral and written communication concerning this noncompliance. After reviewing the plant's Operational Sanitation record and GMP Monitor's record (Evisceration Department) shows no entries documented prior to my observation of this noncompliance. 416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.2(d) Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
