Violation: 416.4(a), 416.4(d)

Citation: The following noncompliance's were observed in the cut up department I found a box of boneless thighs with some black greasy marks on the thighs. At this time was notified of this noncompliance and I applied USDA Retained tag # B39133651. I also noticed that there was an extreme amount of buildup on the breast/ leg splitting machine, I stopped the cut-up line and had the machine cleaned out. Going on through the cut up area a box of chicken breast was seen under the conveyor chute coming from the box room ,with out a lid, product exposed ,and box dust falling on to the product. At this time I again notified of this ,and applied a USDA Retained tag # B39133653,a short while later in the same department I found 14 cases of whole birds along the wall that were hit with over spray from the sanitation hose, again I notified and applied USDA Retained tag # B38670140. Establishment management has received oral and written communication concerning these noncompliance's. Past Similar NRs - Previous Ineffective Plant Actions: Procedure to ensure that product is produced in sanitary manner and that all actions are taken to prevent potential product contamination or adulteration. NR: 53-2010 dated 8/26/2010


416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
