Citation: At approximately 0845 hours, after plant's pre-operational sanitation and during operation the following noncompliance was observed in the cooler area. While walking through the plant (SCSI) and I went in the cooler area and under the cooling unit number two and three we observed condensation. We also observed condensation on the ceiling located on front of the above mention cooling units, under the small drip pan located near the exit roll up door to the dock area and on different areas on the conjunctions of the metal ceiling near the north wall in the cooler. I also observed rust in some of the areas on the ceiling were the condensation was observed. We immediately notified (Second Processing Manager), (Shipping Supervisor) and (Special Projects Manager) of our observations. We also observed that the roll up door in the cooler to the dock area didn't closed all the way down , allowing warmer air to enter the cooler. asked since when that door was malfunctioning; informed that the door was like that since early in the morning. All the boxes and combo bins where removed from the affected areas. The drippings from the condensation didn't contaminate the product stored in the cooler because the product in the boxes were [redacted] and tray pack and the combo bins were cover with plastic at the moment of my observation . This is a failure to comply with 9CFR 416.2(d) and 9CFR 416.2(b)(1) .


416.2(b)(1) Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.

416.2(d) Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
