Citation: On 11/30/10 while performing procedure code 03J02 at approximately 1020 hours I observed the plant was saving caul fat for edible purposes . Upon further inspection of the caul fat I saw several sections of intestine approximately 4-5 inches long still attached to the caul fat , and that 2 pieces were contaminated with mucosa. This is a noncompliance with Meat and poultry regulations 9CFR310.18 . There was no indication that this noncompliance was observed by the establishment. A regulatory control action was taken using U.S. Retained tag #B37057626. Failure to control this type f noncompliance could result in further regulatory and or administrative control measures.


310.18(a) Carcasses, organs, and other parts shall be handled in a sanitary manner to prevent contamination with fecal material, urine, bile, hair, dirt, or foreign matter; however, if contamination occurs, it shall be promptly removed in a manner satisfactory to the inspector.
