Citation: At approximately 1000 hours while performing a scheduled sanitation performanse task the following noncompliance was observed. In the sausage room above the sausage stuffer, on the ceiling,are several dark spots of apparent residue from from the previous days production that have not been cleaned. This is a violation of the aforementioned regulation.Joe (owner) was informed verbally and in writing with this documant of the need for corrective action. A review of available plant records indicate no action being taken on this noncompliance. A check of the noncompliance record show no recent noncompliance of this nature. No product was being produced on this day so no affected product.


416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
