Violation: 416.4(b)

Citation: On 12/21/11, while performing unscheduled PBIS task code 01B02, at approximately 08:10am, I found the following non-compliances. 1. The exhaust fan on the kill floor, was seen to have cobwebs in the corners of the framework. 2. The ceiling of the kill floor, between the railing and the exhaust fan, was observed with numerous dried fat deposits from the previous days production. 3. In the carcass chill cooler, the (3) plastic fan guards, on the refrigeration unit, was seen to have black stains/mold on the outer surfaces. After a review of the plants preoperational sanitation checks, for 12/21/11, that were performed before the IIC's pre-operational task was performed, were all marked as acceptable. Let it be noted, that all of the non-compliances stated above, were a non-product contact zone. Joe Bingman was informed of these noncompliances, both verbally and in writing with this NR.


416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
