Citation: At approximately 0930 hours while performing unscheduled ISP code 06D01 in the processing room I observed the following deficiencies. There is an accumulation of rust on the metal support and motor housing for the stainless steel sausage mixer. The overhead heating unit located near the cutting tables has an accumulation of product residue and rust on the entire surface. The 2 metal wrapping paper dispensers on the table are rusty. There is an accumulation of dried product residue on the ceiling in the processing room. The metal support for the heating unit and scale next to the door is starting to rust . The wallboard behind the scale has separated from the wall exposing about a 1 inch gap. A check of the daily SSOP records found that these deficiencies were not documented. No tag applied. This is a violation of FSIS regulations 416-2(b)(2) and 416.4(b). I informed Mr. [redacted] orally and in writing with this NR of the noncompliance.


416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
