Citation: During the course of the Food Safety Assessment, the following noncompliances were observed:

On 06/28/11 at approximately 1430 hours, multiple doors (entry to the maintenance room, entry to the smokehouse room, entry to the slaughter floor from the animal holding pens, the offal room overhead door) were observed to not fully close or seal, allowing possible rodent entry.
A gap around the compressor opening in the wall which does not fully seal.
The offal room has an old entryway which was covered with glassboard; however, the board has multiple small holes.


416.2(b)(3) Walls, floors, ceilings, doors, windows, and other outside openings must be constructed and maintained to prevent the entrance of vermin, such as flies, rats, and mice.
