Citation: At approximately 0610 hours on the 29th of December, prior start up the slaughter operation, while performing directed SPS verification, the following was observed: Blood Room *rust forming on the electrical conduits; *rust on various areas on the frame work at the entrance door; Cooler 1 *rust around the door handle facing inside the cooler 1; Cooler 2 *rust forming on the frame work at the entrance door; *brown to dark brown stains on the concrete frame work at the entrance door; Cooler 3 *blood stains on various fabric areas (where the tears were existed) of the double green canvass doors facing the kill floor; *rust on the electrical box and conduits overhead adjacent to one of the cooling unit; *rust on various areas of frame work of the exit/unload door to outside premise; [redacted] slaughter supervisor, was informed of the aforementioned noncompliance. The establishment sanitation monitoring log has had no documentation reflecting to the aforementioned findings. This is failure of 9CFR 416.1, 416.2(b)(1)(2), and 416.4(b).


416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
