Citation: On the 4th of January, 2011; at approximately 0710 hours, while performing other inspection requirements/facilities and equipment standard, the following was observed: *rust forming on various locations of the metal bars gate and peeling paints exposed several sharp edges on the bars at the stunning/bleeding area; *a crack on the floor tile at the entrance to the eviscerating area; *various cracks on the wall tiles located at the eviscerating table, inedible barrels, and behind the floor scale in the eviscerating and final trim areas; *a big crack approximately 6" x 13" on the floor exposed pieces of broken/crush floor material on the floor in the back walkway to the cooler 4; *door handler bend, unable to open from the inside to the outside shipping area in the cooler 3, in addition, the door is not completed shut. [redacted] slaughter supervisor, was informed of the noncompliance. The establishment's preoperational sanitation monitoring form had no documentation reflecting the aforementioned noncompliance. This is a failure of 9CFR 416.2(b)(1)(2).


416.2(b)(1) Construction. Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
