Citation: At 0700 hrs on the 4th of August, while performing preoperational sanitation verification (01B02), I observed the following noncompliance: Blood Room * the metal door upon entering the room has rust on the hinges; * a metal shelf on the left side of the room has rusted metal washers on the bracket fasteners; Storage Room * dirt and debris on the floor; * blood and residue on the white door; * dirt and residue on the wooden wall; * no lighting available in the room; Stunning Area * accumulation of dust on two overhead ventilation fans; Shaving Area * metal door jamb pulling away from the wall adjacent to the sterilizer; Eviscerating Area * organic residue on the overhead cooling fan blades; [redacted] slaughter supervisor, was advised of the aforementioned noncompliance. The plant's daily sanitation monitoring logs has no documentation reflecting the insanitary conditions. This is a failure of 9 CFR 416.2(b)(1); 416.2(c);, and 416.4(b).


416.2(b)(1) Construction. Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.

416.2(c) Light. Lighting of good quality and sufficient intensity to ensure that sanitary conditions are maintained and that product is not adulterated must be provided in areas where food is processed, handled, stored, or examined; where equipment and utensils are cleaned; and in hand-washing areas, dressing and locker rooms, and toilets.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
