Citation: Today at approximately 0705 hours before the operation started, and after the plant manager Mr. [redacted] said that he had finished his Pre-Op task, and found all areas were acceptable. I performed my Pre-Op inspection and found the following: (1) The right hand side wall of the evisceration room appearing with many black color foreign particles, and black color residues appearing along at the edges of the wall panel sidings and at around the wall panel mount plastic button-head nails. (2) Black mold appearing at the junction of the ceiling and the wall with a clock in the evisceration room. (3) Black dust and residue appearing around a water pipe and a short hose connected to it located about 4-5 feet away from the right side of clock mounted on the same wall in the evisceration room. (4) Rust and residue appearing at the top of the door entrance of a cooler next to the slaughter room. The plant manager Mr. [redacted] was notified and shown of the noncompliance. He immediately asked works to perform the immediate corrective action. The result of cleaning and sanitizing the areas were observed and satisfied. Failure to meet the federal regulatory requirement of the 9 CFR 416.2(b)(2) which stated that walls and ceilings within establishments must be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.


416.2(c) Light. Lighting of good quality and sufficient intensity to ensure that sanitary conditions are maintained and that product is not adulterated must be provided in areas where food is processed, handled, stored, or examined; where equipment and utensils are cleaned; and in hand-washing areas, dressing and locker rooms, and toilets.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
