Citation: On Wednesday, August 17, 2011 around 0730 hrs, while performing a Haccp implementation procedure through records review, I noticed the results for monitoring carcass temperature for the last four lots on August 16 were not recorded on the carcass chill log. In it's place was written " Next day use". The preshipment review signature and date were also missing.
