Citation: On July 20, 2011 at 7:30 a.m. while performing pre-op procedures I found a couple of noncompliance. In the kill room on the wall to right of the entrance to this room where the knife holder is located I observed blood and feathers from previous day production. In addition,the cylinders where the birds are placed to bleed out are broken and cracked. In the condition they are in it has become more difficult to maintain these cylinders properly cleaned. In the inspection room on the wall in which has to water connection I found the two small water hoses to be dirty with in. Due to this reasons plant is in violation of directive 416.4(b) non-food contact surfaces and because plant did not find these non-compliances they are also in violation of 416.13(a) pre-op procuders and 416.13(c) plant monitors implementations of SSOP procedures. [newline] This documents serves as written notification that your failure to comply with regulatory requirements can result in additional regulatory or administrative action.


416.13(a) Each official establishment shall conduct the pre-operational procedures in the Sanitation SOPís before the start of operations.

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
