Citation: [newline]At approximately 0715, just after the first animal was hung, I noticed that the black steel barrel on the kill floor located by the head-lock end of the knocking box had remnants of paunch contents on it, both on the inside and outside covering approximately of the circumference of the barrel and 4” down from the top. This barrel is used for blood storage, as blood is transferred to this barrel from a plastic “catch” barrel. Both and were verbally notified of this non-compliance and corrective actions were immediately taken, by & by thoroughly washing of this barrel. No regulatory control action was taken as the non-compliance was immediately corrected by plant personnel; also no product was affected/adulterated.


416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
