Violation:  416.13(c), 416.4(a)

Citation: At approximately 0710 while conducting a pre-op SSOP review and observation procedure, I proceeded to the randomly selected cutting table area. At this cutting table located closest to the entrance, was assembling the cube steak machine, and during this assembly he moved the machine closer to the forward edge of the table. While doing so, this exposed 2 pieces of beef meat/fat tissue approximately ” in diameter each that were underneath the cube steak machine, left from previous nights cleanup. immediately disposed of the meat pieces, then cleaned and sanitized the stainless steel area where these scraps existed. I informed and of my intent to write a non-compliance report on this issue. As production had not begun, no product was involved, and corrective actions were immediately taken, no regulatory control action was taken. I then proceeded to perform a complete pre-op inspection, including records and found no other deviations. I also was not able to link this non-compliance to any previous ones.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
