Citation: After performing ante-mortem at approximately 0715 I noticed numerous cobwebs in the back room/alleyway/barn area's ceiling. This defficiencey was recorded under a routine scheduled SPS verification procedure which was performed when the cobwebs were noticed. was verbally notified of this defficiency and stated he "would have it taken care of". No product adulteration has occurred . A regulatory control action was taken by placing US RETAINED TAG #766787 in the barn area.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
