Citation: While conducting an 01B02 @ approximately 0705 , I first checked the preoperational SSOP records and upon review of these records I noted no deficiencies were recorded. Yet when I performed the direct observation element of this procedure, I noticed two 1/4" pieces of dried meat/fat scraps on the shelf that contains the vacuum seal bags & 2 cobwebs approximately 6" square in the 2 uppermost ceiling corners of the plant entrance room. Upon further investigation I noted no bags were affected by this insanitary condition. & no contamination occurred as a result of the cobwebs. I verbally addressed of the situation and he immediately cleaned & sanitized the shelf, then proceeded to sweep down the cobwebs. No regulatory control action was needed as immediately addressed the situation. After reinspection, the plant was allowed to begin production.


416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
