Citation: At approximately 1330 while performing a scheduled 01C02 in the processing room I noticed a piece of flaking paint on the cooler door frame above the door entering the cooler. The approximately 1/4' X 1/2' flake had not yet fallen off, and upon further examination I noticed 3 more spots where the paint had bubbled. U.S reject tag #223047 was applied.. I then verbally notified of the situation and he took action to remove all loose material immediately, Since production had ceased in this area and no paint chips had fallen yet, I concluded no product adulteration had occurred.


416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
