Citation: At 0730 While conducting a scheduled 06D01 on the alternate week that focuses on SPS issues, the construction element was randomly selected. While doing a walk through of the plant, I noticed several pieces of concrete repair material had broken out of the cracks on the kill floor's floor, leaving a space where water could "pool" with organic matter from the slaughter process, causing possible microbial growth, which in turn creates an insanitary condition. The nine cracks range from 1" to 5" long by approximately 1/4" by 3/8" wide are located near the center of the kill floor and running in north & south as well as east & west directions. This is a violation of 9 cfr 416.2 (b)(1). U.S. rejected tag #223039 was applied, and Mr. was verbally informed of the non-compliance, in which he stated "this is a routine fix due to the age of the structure", a plan for repair was discussed and agreed upon after next week's kill the cracks will be filled, (giving time to repair correctly) during the slaughter procedure a sanitizing solution will be periodically applied and special precautions will be taken to avoid product contamination. the reject tag was then removed. This report serve as written notification of a violation of 9 cfr 416.2(b)(1)


416.2(b)(1) Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.
