Citation: While conducting a walk thru inspection with EIAO Dr. on 01/04/2012 the following SSOP noncompliance’s were noted: In the beef holding cooler there was a knife scabbard hanging on the wall containing a wooden handled knife, both scabbard and knife were dirty containing blood and fat from a previous days production, the knife also had a rusty blade. On the loading dock area there was a scabbard attached to the wall containing a white plastic handled knife, the knife and scabbard were dirty, both had blood and fat particles on them. These knives are used for breaking carcasses and other trimming purposes prior to shipping. These knives are food contact surfaces and are not included in the SSOP procedures. These issues are noncompliant with 9 CFR 416.3(a), 416.4(a) and 416.12(a). Mr. and Mr. were notified of these noncompliances.


416.12(a) The Sanitation SOP’s shall describe all procedures an official establishment will conduct daily, before and during operations, sufficient to prevent direct contamination or adulteration of product(s).

416.3(a) Equipment and utensils used for processing or otherwise handling edible product or ingredients must be of such material and construction to facilitate thorough cleaning and to ensure that their use will not cause the adulteration of product during processing, handling, or storage. Equipment and utensils must be maintained in sanitary condition so as not to adulterate product.

416.4(a) ) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
