Citation: On July 22, 2010 at approximately 07:45 hours after plant pre-operational inspection and prior to start of slaughter operation I performed procedure code 01B02, and I found the following noncompliance: The small animal cooler had blood on each wall from the previous day use. I took a regulatory control action applied a U.S. Reject tag # B18815305 to the small animal cooler. I checked the pre operational records, this deficiency was not found. I notified Kill Floor Supervisor/HACCP Manager of this noncompliance. The area was immediately cleaned sanitized and then re-inspected and acceptable. The room was released from my regulatory control action at approximately 0805., Plant Manager has been informed of these noncompliance's in both writing and orally. This document serves as a written notification that failure to comply with regulations could result in further regulatory and or administrative actions.


416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
