Citation: Today at approximately 0730 hrs I observed the following non-compliance. In the retail area that was being used for inspected product today, I found several pieces of dried fat on the band saw. There were pieces ranging in size from minuscule to a 3 inch long piece of fat on both the contact and non-contact surfaces of the machine. The plant has previously been informed that if they need to use part of the retail area for USDA inspected products they are subject to all USDA regulatory requirements. The plant failed to meet Federal Regulations 9 CFR 416.4(a), 416.4(b) and 416.13(a). The plant immediately re-cleaned the band saw and band saw parts, no USDA reject tag was applied.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
