Citation: On 6/5/12, while reviewing the SRM logs I found the following non-compliance. There were 2 bovine that were recorded in the SRM log as over 30 months. I went in the cooler to verify that the bovine were still in the cooler since the SRM log for the vertebral column hadn’t been completed. When I found both carcasses neither one had been marked over 30 months. I then placed U.S. Reject tags NO. B39879044 and U.S. Reject tags NO. B39879045 to both carcass halves designated as 56. I also placed U.S. Reject tags NO. B39879046 and U.S. Reject tags NO. B39879047 the other 2 half carcasses designated as 59. I informed of the non-compliance. He proceeded to have a slaughter floor employee mark the carcasses over 30 months.

Regulation:

310.22(e)(1) ) Procedures for the removal, segregation, and disposition of specified risk materials. (1) Establishments that slaughter cattle and establishments that process the carcasses or parts of cattle must develop, implement, and maintain written procedures for the removal, segregation, and disposition of specified risk materials. These procedures must address potential contamination of edible materials with specified risk materials before, during, and after entry into the establishment. Establishments must incorporate their procedures for the removal, segregation, and disposition of specified risk materials into their HACCP plans or Sanitation SOPs or other prerequisite programs.
